This pickle is ultimate in taste, today we are going to share a perfect authentic winter special pickle with homely ingredients.

250 gram Carrots
250 gram turnip / shalgam
250 gram cauli flower / gobhi
1 tsp cumin seeds
1tsp black pepper powder
1/2 tsp cloves
2 black cardamom
1 tbsp salt
1tbsp Red chili powder
½ tsp turmeric powder
2 tbsp finely crushed garlic
2 tbsp finely crushed ginger
100 gram mustard oil
2 tbsp jaggery
2 tbsp vinegar
2 tbsp Yellow Mustard seeds
Wash the vegetables, cut carrots in lengthwise, chop cauliflower in florets, chop turnip in big pieces. Now spread them on a kitchen napkin and keep in sun for long time. Add cumin seeds, black pepper corns, cloves, cardamom in a pan, roast for few seconds. Allow to cool and transfer in a mixer jar. Add yellow mustard and grind in a fine powder. Add jaggery and vinegar and cook till it melts properly. Heat mustard oil and add garlic and ginger, cook on low flame. Add ground masala and cook for a minute. Add chopped vegetables, salt, and mix nicely. Allow to cook for 3-4 minutes. Add jaggery and vinegar mix. Cook for a minute. Switch off the flame and allow to cool. Store in a glass jar. Keep on room temperature or for long time keep in fridge.
