For masala - 1 tsp mustard seeds 1 tsp cumin seeds 6 garlic cloves 1 green chili 1 tbsp Fresh coriander 1/2 tsp Red chili powder 1/2 tsp Salt 1/4 Cup Boiled and grated beetroot 1/2 cup thick hung curd 1/2 cup finely chopped onions 1/2 cup finely chopped cucumber For tempering – 1 tbsp Oil 5-6 Cashews Fresh curry leaves Dry red chilis 1 tsp mustard seeds 1 tsp urad dal 1 Cup boiled rice
For masala – mix all ingredients in a mortar and make a course paste. Mix beetroot, onions, cucumber, fresh coriander, curd and mix nicely, add 1 cup boiled and cooled rice and mix. For tempering – heat oil and crackle mustard seeds, urad dal and add dry red chilis, cashews and curry leaves, pour over the beetroot rice and enjoy delicious beetroot curd rice.
