2 Cups Besan 1/4 Cup Ghee 1/4 tsp yellow food colour / haldi powder 250gram Khoya 1 cup milk 1 Cup Sugar Cardamom powder
Mix ghee besan and yellow food colour in a bowl, add 1/4 cup water and prepare a soft and sticky dough. Fill in a sev maker and pipeout in hot oil or ghee and fry till they become crispy, Fry all sev in the same way and crush the sev. Add khoya in a wok and 1 tsp ghee and roast on low flame 4-5 minutes, take out one 2 tbsp khoya and keep aside. Add 1 cup milk and mix nicely. Prepare a thick and creamy mixture. Add sugar and preserved khoya and mix nicely, cook for 5 minutes, make the mixture little thick. Add crushed sev, cardamom powder, mix and switch off the flame. Cover and keep aside for 30 minutes. Now transfer this mixture in a greased tray, flatten it and keep aside for setting. After 2-3 hours make square cuts and enjoy homemade sindhi sev barfi which is also famous for singer ji mithai / barfi.
