Wash and soak rice for 30 minutes, after 30 minutes, remove all the water, transfer soaked rice in a mixer jar. Grind and make it coarse. Add 1/2 cup milk in coarse rice. Add leftover milk in a wok. Boil and add coarse rice mixture. Cook on low flame till rice cooked properly. Add khoya and sugar, cook for 5 minutes and switch off the flame. Allow to cool. Divide the phirni in 3 equal parts. For green phirni, add soaked pista in a mixer jar and grind in a paste. Add this paste in a bowl and mix nicely. For saffron colour phirni, add soaked saffron in second bowl, mix nicely. Now serve them in clay / mud pots and serve chilled.
