250Gram Small brinjals For gravy - 1/4cup peanuts 1/4cup grated coconut 7-8 garlic cloves 1 chopped onion 1tsp cumin seeds 1 tbsp oil 2 green chilis 1tbsp poppy seeds 1tbsp red chilli powder 1tbsp coriander powder ½ tsp turmeric powder 1 tsp Salt Fresh coriander
Wash brinjals and make cross with a knife, make sure brinjal joint from the top side. Fry them in hot oil for 2 minutes, take them out and keep aside. For gravy, heat a tbsp oil in a wok, crackle cumin seeds, add peanuts and cook for a minute, add coconut and poppy seeds and cook for a minute. Add onions, garlic, green chilis and cook for 2 minutes. Add red chili powder, coriander, turmeric and salt, mix and switch off the flame. Allow to cool. Transfer in a mixer jar, add water and prepare a fine paste, transfer this paste in a bowl, add fresh coriander and mix, fill this stuffing in fried brinjals. Heat 2 tbsp oil in a wok, add stuffed brinjals, add leftover paste and cook for a minute, add water, cover and cook till brinjals cook properly. Switch off the flame, garnish with fresh coriander and serve with roti chapatti.
