Fresh coriander
Take fresh coriander and wash with tap water nicely. Leaf and root part should be cleaned nicely. Remove extra water from fresh coriander by tapping with your hands.

Now cut the fresh coriander bunch with a knife in 2 halves.

Now take the front part of the fresh coriander bunch and chop it with a knife. Spread this chopped fresh coriander on a plate and keep under the fan for 10 minutes.

Place a kitchen paper napkin in the bottom of the box, the sides also covered with paper napkins. Fill the box with chopped fresh coriander, place a kitchen paper over it and close the lid. Keep in the fridge for 15-20 minutes. This will be used for garnishing.

Now take the leftover part of the fresh coriander bunch. Remove the root part from the bunch and discard that part. Now we have the middle part of a fresh coriander bunch.

Remove thick stems from the middle part and store in a good quality food grade container in the same way which we used in the finely chopped coriander. Prepare chutney from this coriander.

Keep both the boxes in the fridge
