Kitkat cake can be made at home with simple ingredients at home with quick steps. This cake is very soft and spongy and baked in kadai (stove top)

Ingredients –
For cake batter
100ml hot water
1 tbsp instant coffee powder
2 tbsp Oil
1/4 cup Powdered sugar
3/4 cup Maida
2tbsp unsweetened cocoa powder
½ tsp baking soda
1 tsp vinegar
For ganache –
150 ml amul cream
300gram dark chocolate
Kitkat chocolate
Mix coffee and hot water and keep aside. Mix oil and powdered sugar in a bowl.

Add coffee water and mix nicely. Place a sieve and add maida, cocoa powder, baking soda and mix in wet ingredients. Prepare a ribbon consistency cake batter, add vinegar and mix. Pour cake batter in a greased 5 inch cake tin, tap for 2-3 times. Preheat a kadai or a big vessel, place a ring and place cake tin, cover and bake for 30-40 minutes on low flame. Or can bake in a preheated oven for 40 minutes at 180 degrees.

Check with a toothpick and switch off the flame, take out the cake mould from the kadai and allow to cool for 30 minutes, demould and let it cool for 2 hours.

For ganache heat 150ml fresh cream till bubbles come, add 300gram dark chocolate, mix and keep aside for 10 minutes. Mix gently, keep aside for 2-3 hours at room temperature or can keep in fridge for 30 minutes.

For soaking syrup, mix 2 tbsp powdered sugar and 2 tbsp water in a bowl.

After 2 hours slice the cake with a serrated knife. Place a cake slice on a cake board, soak the cake with. Apply prepared ganache on the cake slice and spread evenly.

Place second cake slice and cover with ganache, now cover the whole cake with ganache.

Cover the cake sides with kitkat chocolates. Fill a piping bag with leftover ganache, decorate the cake top with ganache and enjoy homemade eggless kitkat chocolate cake.
