1 cup / 100 gram maida 1 tbsp besan A pinch of red orange food colour 1/4 tsp eno (fruit salt) For sugar syrup – 300gram sugar 1/2 tsp cardamom powder A pinch of red orange food colour
For sugar syrup, add sugar and 200ml water in a pan, melt sugar on high flame, now reduce the flame and cook sugar syrup for 5-7 minutes on low flame. Add cardamom powder and red orange food colour and switch off the flame, keep aside. For jalebi batter – Mix maida, besan and red orange food colour. Gradually add water and make a thick and sticky batter, beat the batter with hand for 2 minutes, add ¼ tsp eno (fruit salt) and mix nicely. Heat ghee or oil in a flat bottomed pan on medium low flame. Fill the batter in a piping bag or in a plastic bag. Cut a small corner of bag with scissors. Pipeout jalebis in medium hot ghee / oil and fry on high to medium flame for few seconds. Take out fried jalebis from ghee / oil. Dip fried jalebi in prepared luke warm sugar syrup for 10-15 seconds. Enjoy hot, crispy, juicy jalebi jalebi.
