Kachora is a famous Street Food from Rajasthan. It is Usually available in a town called Naserabad (Near Ajmer) . Many Shops might sell it but they can never match the taste of the Original shop known as "Chavannilal" . here i have shown the recipe almost similar to the experience for nostalgic experience.

For dough –
150 gram Maida
3 tbsp / 30 ml oil
½ tsp Salt
For Stuffing –
75gram Urad dal soaked for 3 -4 hours
4 dry red yellow whole chilis
15-120 whole black pepper corns
5-6 cloves
1 tsp fennel seeds
1 tsp coriander seeds
1 bay leaf
1/4 tsp Salt
1 tsp dry mango powder
For dough – Mix maida, salt and oil in a vessel. Add water and prepare a soft and sticky dough. Cover and keep aside.

Add dry red chilis, black pepper corns, cloves, fennel seeds, coriander seeds, bay leaf in a mixer jar and prepare a coarse powder, take out the masala in a bowl.

For stuffing – Soak urad dal for 4 hours, remove all the excess water. Add in a mixer jar and prepare a coarse paste. Transfer this paste in a bowl. Add masala powder, dry mango powder, salt and mix nicely. Prepare a ball from the stuffing.

Prepare a ball from the dough. Flatten it in a thick disc. Place the stuffing ball and cover the ball from the dough from all sides and seal nicely. Now roll it in a thick round disc with a rolling pin. (approx. 8-9 inches diameters) Make holes using one rupee coin.

Fry in medium hot oil on low flame till the kachora become crispy and golden brown. Take out from the oil and enjoy homemade nasirabad famous kachora.
