Soya chaap masala curry is a very famous north indian curry. It can be prepare at home with simple steps.

6 soya chap sticks
1 cup onion paste
1 cup tomato paste
1 cup sliced onion
1 tbsp ginger-garlic paste (homemade)
1 bay leaf
1 cinnamon stick
2 tbsp oil
1 tsp cumin seeds
1 black cardamom
3-4 whole black pepper powder
1 tbsp ginger julienne
1 tbsp cumin powder
1 tbsp fennel seeds powder
1tbsp coriander powder
1 tbsp red chili powder
1/4 cup fresh cream

Method – Take out soya chaap from the tin and wash with clean water. Squeeze them gently and remove the sticks. Cut soya chaap in three pieces. Deep fry them in hot oil till golden brown. Take out them and sprinkle ½ tsp salt, ½ tsp red chili powder over them, mix and keep them aside.

Heat 2-3 tbsp oil in a wok, add cumin seeds, cinnamon stick, bay leaf, cardamom, black peppercorns and saute for a few seconds. Add sliced onion and 1 tbsp ginger julienne and roast on low flame till onions become brown in colour. Add onion paste and ginger- garlic paste roast for a few minutes on low flame.

Add cumin powder, fennel seeds powder, coriander powder, red chili powder and mix, cook for a minute on low flame. Add tomato paste, 1 tsp salt and add ½ cup water and allow to cook. Cover it.

Uncover and add 1 cup water and cook on low flame. Add ¼ cup fresh malai, fried soya chaap, green chilis, ginger julienne, garam masala and cook for 3-4 minutes, switch off the flame and garnish with fresh coriander.
