Ingredients – For suji roll batter 1 cup suji / semolina 2 tbsp whole wheat flour ½ cup curd 1 inch ginger 2 green chilis ½ cup fresh coriander 1 tsp Salt For tomato chutney- 3-4 chopped tomatoes 2 tsp oil 1/2 tsp fennel seeds ½ tsp cumin seeds 1/2 tsp mustard seeds 1/2 tsp kalonji (nigella seeds) 1/2 tsp fenugreek seeds 1/2 tsp salt Chopped green chili 1 tsp red chili powder 1/4tsp turmeric powder ½ tsp black salt 2 tsp sugar
Add suji and wheat flour in a mixer jar and mix nicely. Add curd and 1/4 cup water, grind it again Transfer in a bowl. Add water and prepare a thin batter, add salt, fresh coriander leaves, red chili flakes and mix. Cover and keep aside. For tomato chutney, heat oil in a pan, add fennel seeds, cumin, nigella seeds, mustard seeds and fenugreek seeds and crackle for 20 seconds. Add chopped tomatoes, green chilis, red chili powder, turmeric powder, salt and mix, cover and allow to cook for 5-6 minutes, add water if required. Now uncover and give a stir, add sugar, black salt and mix, tomato chutney is ready. Now uncover the suji batter bowl. Mix nicely. Grease metal plates with oil, Spread a big spoonful batter on the greased plate and steam for 3-4 minutes on high flame. Take out the plate from steamer, allow to cool and cut in long strips. Roll them and serve them with sweet and sour tomato chutney.
