For masala dosa batter- 1 cup suji 1/2 cup curd 1tbsp besan 1tbsp wheat flour 1 tsp salt For Masala – 3-4 boiled and peeled potatoes 1 sliced onion 1tsp oil 1 tsp mustard seeds 1tbsp urad dal 1tbsp chana dal 1 chopped green chilli 5-6 curry leaves 1/2 tsp turmeric powder 1/2 tsp red chili powder 1 tsp salt Fresh coriander
Add sooji, besan, and wheat flour in a mixer jar. Grind and make a fine powder. Transfer in a bowl, add salt and curd. Prepare a thick batter using water. Mix and cover, keep aside for 10 minutes. For masala – Heat oil, crackle mustard seeds, urad dal, chana dal in oil. Add curry leaves, green chilis, onion and cook for 2 minutes on low flame. Add red chili powder, turmeric powder, salt and mix. Add boiled and roughly mashed potatoes and cook for a minute. Add 1/4 cup water and mash the potatoes. Cook for 2-3 minutes, add fresh coriander, and switch off the flame. Now uncover the dosa batter, add water and prepare a free flowing consistency dosa batter. Add 1/4 tsp baking soda and mix nicely. Heat a nonstick tawa on low flame, grease with oil, wipe out the extra oil from tawa with the help of a paper napkin. Set flame on low. Pour a big spoonful of batter in the middle of tawa and spread out in a circular motion. Now increase the flame and cook dosa till brown marks. Apply oil or butter if you wish. Place prepared masala and roll the dosa. Remove from tawa and enjoy crispy dosa with chutney and sambhar.
