Verki puri is very crispy and layered dry snack recipe. Generally, it is prepared on festive time and prepared with maida. These days people are avoiding bleached flour, so today I am came up with an idea of whole wheat flour snack recipe which is very crispy and layered. These crispy layers will tempt you. This is very easy to make and can store them for a month.

300g Gehu aata (wheat flour)
1/2 cup sooji
60 ml oil
1 tsp salt
1 tsp carom seeds
For slurry -
2 tbsp ghee/ clarified butter
2 tbsp corn flour
1. Add semolina, salt, carom seeds in wheat flour and mix.

2. Add oil and mix nicely.

3. Gradually add water and prepare a tight dough.

4. Cover and set aside for 10 minutes.

5. Meanwhile add clarified butter in corn flour and prepare a thick slurry.

6. After 10 minutes uncover the dough and knead for 1 minute. Divide the dough in small portions. Prepare balls.

7. Roll all three balls in a thin disc with the help of rolling pin.

8. Apply 1/2 tsp prepared corn flour slurry on the rolled disc and spread evenly. Place second rolled disc over it and spread corn flour slurry. Repeat this process for 3 times.

9. Now roll it tightly. Gently press and roll with palms.

10. Cut the log in 1/2-inch-thick slice with a knife.

11. Give round shape to all pieces and press them with palms.

12. Gently roll all the pieces with a rolling pin.

13. Fry in medium hot oil on low to medium flame till they turn light golden brown and crispy.

14. Take them out from the oil.

15. Super crispy atta varki poori is ready. Store in an airtight container.
