Kalakand / milk cake is one of the favorite and famous sweet of Indians, Traditionally milk cake is prepared with full cream milk and sugar. In this recipe I am going to give a healthy and delicious twist to a regular kalakand. Do try it on the auspicious day of Diwali

1 litre full fat milk 150g sugar 50g Xanthan gum Ghee for frying
This is xanthan gum (edible gum) which is easily available at grocery store or dry fruit shop.

Fry in hot oil on high flame till the gum is puffed up.

Add milk in a vessel and allow to boil.

Stir continuously till the milk is reduced till its 3/4 th of the original quantity. Flame should be on medium.

The milk is reduced, add fried Xanthan gum in milk in batches and stir.

You can see the milk is started to curdled. Mix more fried xanthan gum till it curdled nicely.

Add last batch of fried xanthan gum and allow to cook on high flame, stir continuously.

Cook till it becomes in thick paste like consistency.

Add sugar and stir continuously.

Cook till it thickens as shown in the video

It is in thick consistency now. Switch off the flame and add cardamom powder.

Grease 5 inch cake tin or a plate with ghee.

On a thick napkin place the greased tin. Pour prepared kalakand mixture in greased tin and cover it nicely with napkin, keep aside for 4-5 hours. It makes it more beautiful and delicious.

Wow it is perfectly set.

Demould it.

Cut in square pieces. Soft and delicious gond kalakand is ready
