Palak Pakoda Chaat

For Palak Pakora/ Fritters

  1 Finely chopped bunch of spinach

  2 Cup of gram flour (Besan)

  1/2 Tsp carom seeds

  1 Tsp Red chilli powder

  1/2 Tsp Garam masala

  A pinch of baking soda

  Salt to taste

  Oil for frying

For Curry

  1/2 Cup Gram flour (Besan)

  1 Tbsp Dry mango powder (amchur powder)

  1/2 Tsp Mustard seeds

  1 Tsp Red chilli powder

  1 Tsp Salt

  1 Green chilli

  1 Tsp Oil, Tamarind Chutney

Add spinach leaves in a big bowl. Add salt, red chilli powder, carom seeds, salt, baking soda and gram flour.

Crush the leaves of spinach with hands so that the leaves release their water and merge properly.

Cover and keep aside for 10 minutes.

Meanwhile add gram flour, salt, red chilli powder, turmeric powder, dry mango powder in a bowl.

Mix well.

Gradually add water and make a lump free batter. Now add 2 glasses of water. Mix well.

Heat oil in a pan. Crackle mustard seeds. Add green chilli.

Add prepare gram flour batter in hot oil and stir continuously.

Cook on medium flame for 18-20 minutes.

Switch off the flame and garnish with fresh coriander.

Uncover the spinach mixture. Now the spinach leaves have released their water.

Add 1/4 cup water and make a very thick batter.

Add pakoda batter in hot oil. There is no need to give them proper shape, it will make pakoras crispier.

Flip them and fry on high flame. Take them out.

For assembling add crispy spinach pakora/fritters in a serving bowl.

Add hot curry and tamarind chutney.

Crispy palak pakora with tangy curry is ready to serve!!
