For Hara Bhara Tandori Platter

# 3/4 Cup hung curd

# 3 Tbsp Green chutney

# 1 Tsp Salt

# 1 Tsp Dry mango powder

# 1/2 Tsp Garam masala

# 1 Tsp Ginger-garlic paste

# 1 Tbsp Corn flour

# 1 Tsp Oil

Vegetables -

# 4 Boiled baby potatoes, 4 Pieces of paneer(cottage cheese) (1inch), 4 pieces of

blanched baby corn, yellow, green, red bell pepper, blanched cauliflower florets,

1 inch cubed onions.


For Spicy Tandoori Platter

# 3/4 Cup hung curd

# 1 Tsp Turmeric powder

# 1 Tsp Salt

# 1 Tsp Dry mango powder

# 1/2 Tsp Garam masala

# 1 Tsp Ginger-garlic paste

# 1 Tsp Red chilli powder

# 1 Tbsp roasted gram flour (besan)

# 1 Tsp Oil

Vegetables -

# 4 Boiled baby potatoes, 4 Pieces of paneer(cottage cheese) (1inch), 4 pieces of

blanched baby corn, yellow, green, red bell pepper, blanched cauliflower florets, 1

inch cubed onions.


For Malai Tandoori Platter

# 1/2 Cup hung curd

# 1/2 Cup Malai (fresh cream)

# 1 Tsp Salt

# 1 Tsp Dry mango powder

# 1/2 Tsp Garam masala

# 1 Tsp Ginger-garlic paste

# 1 Tbsp Corn flour

# 1 Tsp Oil

Vegetables -

# 4 Boiled baby potatoes, 4 Pieces of paneer(cottage cheese)

(1inch), 4 pieces of blanched baby corn, yellow, green, red bell pepper,

blanched cauliflower florets,1 inch cubed onions

Divide the hung curd in three equal parts.

For malai tandoori platter beat the curd. Add fresh cream and beat again. Add ginger-garlic paste, salt, garam masala, corn flour, oil in beaten curd. Mix well. Consistency should be thick. Add paneer and all vegetables in curd. Mix with hands. All vegetables and paneer should be coated nicely.

For green tandoori platter add green chutney, ginger-garlic paste, salt, garam masala, dry mango powder, corn flour, oil, red chilly powder in beaten curd. Mix well. Add paneer and all vegetables in curd. Mix with hands.

For spicy tandoori platter add ginger-garlic paste, salt, garam masala, turmeric powder, dry mango powder gram flour, oil, red chilly powder in beaten curd. Mix well. Add paneer and all vegetables in curd. Mix with hands.

All three marinations are ready. Keep them in fridge for 2-3 hours.

Soak satay sticks in water for 2-3 hours.

Assemble the marinated vegetables and paneer in satay sticks as shown in the video.

Drizzle oil on grill pan and place assembled marinated paneer and all other vegetables.

Flip and roast from another side too. They are perfectly done.

Remove from grill pan.

Assemble the green marinated vegetables and paneer in satay sticks as shown in the video.

Place assembled marinated paneer and all other vegetables on hot grill pan.

Flip and roast from another side too. They are perfectly done. Remove from grill pan.

Assemble the marinated malai vegetables and paneer in satay sticks as shown in the video.

Drizzle oil on grill pan and place assembled marinated paneer and other all vegetables.

Flip and roast from another side too. Malai tandoori paneer and vegetables are perfectly done.

Malai tikka, hara bhara tikka and spicy tandoori platter are ready to serve.

From the leftover marination here I have prepared more potato and paneer tikka. Place them on a plate and grill them in microwave for 10 minutes. Flip them and again grill for 8 minutes.

In this video, I had shown two methods of making tikkas. You can prepare with any method. Results will be awesome.
