 200g Maida (all purpose flour)

 60ml Oil, 1Tsp Salt, 1/2Tsp Carom seeds

For stuffing -

 1/2 Cup boiled and diced potatoes

 1/2 Cup Finely chopped onion

 1/2 Cup Finely chopped tomato

 1/2 Pomegranate seeds

 7-8 Monaco biscuits

 1/2 Cup Sev (Savoury vermicelli)

 1/2 Cup beaten curd

 1/2 Cup Tamarind chutney

 1/2 Cup Green chutney

 For seasoning - Salt, red chilli powder, black salt, roasted cumin powder, fresh

Coriander

For dough add flour, salt, carom seeds and mix with hands. Add oil and mix well.

Add water and make a soft dough using water. Cover and keep aside.

Uncover and knead the dough again.

Make small lemon size ball from the dough.

Roll in a small disc.

The disc should be neither thick nor thin.

Here I have used cupcake moulds. You can use normal metal bowls too.

Place the rolled disc in cupcake mould and press to stick it with the mould. Prick with fork.

Prepare all the katoris/ canapes.

Add in hot oil and fry them.

After 2 minutes, the cupcake moulds will release the flour katoris.

Remove the moulds from oil. Be careful at this point.

Fry on low flame from both side.

You can store them for a month in an airtight container.

For stuffing add boiled potato, onions, tomatoes, pomegranate, sev, crushed Monaco biscuits.

Add fresh coriander, black salt, salt, red chilli powder, curd, tamarind chutney, green chutney.

Mix well.

Now fill the prepared stuffing in fried katori.

For final garnishing add some sev, pomegranate, curd, tamarind chutney and green chutney.

Serve and enjoy!!
