Homemade Puff Pastry Sheets and Khari Biscuits

Puff pastry is one of the favorite bakery snack of all and a perfect tea time snack. From puff pastry sheet we can prepare many snacks and dessert. In this video showing easiest way of preparing puff pastry sheets with scratch.

Basic Ingredients

Cooking Method :   

1 Cup = 200ml

 550g / 4 Cups All purpose(maida) + extra for dusting

 260g Margarine / Vanaspati ghee

 40g Margarine for dough

 1 Tbsp Vinegar

 1 Tbsp Gluten

 1 Tbsp Salt

Note :- Lily margarine is perfect for Puff pastry sheets, since it is not easily available in the market, so here I am showing how you can prepare it at home with easily available brands of margarine/ vanaspati ghee.

Add margarine in a pan and heat it till it becomes smoky. Switch off the flame and allow to cool

completely. Scrap and whisk till it becomes smooth. Homemade lily is ready. Collect in a bowl.

For dough add maida (all purpose flour), salt, gluten, 40g margarine and vinegar in a bowl. Mix with hands.

Prepare firm dough using chilled water. Transfer the dough on a platform and knead it for 3-4

minutes. Collect the dough and place in a bowl. Cover and keep in fridge for 15-20 minutes.

Dust the platform with dry flour and roll the dough in a big rectangular shape.

Apply about 80g of lily on 2/3rd part of rolled sheet.

Dust some dry flour on lily and fold sheet like an envelope.

Stretch it and try to make a proper rectangular shape.

Dust dry flour and again roll in a rectangular shape.

Apply about 80g of lily on 2/3rd part of rolled sheet.

Dust a tray with dry flour and place the folded sheet on the tray. Cover the sheet with a damp cloth and keep it in the fridge for 15-20 minutes.

Take out the sheet from the fridge and dust the platform with dry flour.

Roll it in a rectangular shape and apply about 80g of lily on whole sheet.

Dust with dry flour and fold it like a book.

Apply remaining part of lily on the folds, which will make it flakier.

Homemade pastry sheets are ready. Cover the sheet in a cling film and store in deep freezer for any future use. Here I am showing you to make khari biscuits from the homemade pastry sheets.

Take out the pastry sheet from fridge and cut with a sharp knife.

Look your homemade pastry sheet with so many layers are ready for use.

Cover the rest part of pastry sheet again in cling film and store in deep freezer.

Roll it on a dusted platform.

Cut the sides with the pizza cutter or a sharp knife.

Cut in small rectangular shape or as desired.

You can see the layers in sheets.

Place on a baking tray.

Here I twist to the piece of pastry sheet to make a bow tie shape khari biscuit.

Bake in a preheated oven on 200degree Celsius for 20 minutes.

You can see how they have puffed beautifully.

Set the oven on 180 degree Celsius and again bake for 8 minutes.

Khari biscuits are perfectly done and they are crispy and flakey.

Allow to cool completely and store in an air tight container.
