  500g Lady finger/ Okra

  1Tbsp Oil

For stuffing-

  1Tbsp Red chilli powder

  1Tbsp Coriander powder

  1/2 Tsp Turmeric Powder

  1Tsp Dry mango powder (aamchur)

  1Tsp Salt

  1Tbsp Fennel seeds (saunf)

For gravy

  1/2 Tsp Red chilli powder

  1/2 Tsp Coriander powder

  1/2 Tsp salt

   1/4 Tsp Turmeric powder

  1/2 Cup Curd, 1/2 Cup Fresh cream (malai)

 1 Cup Finely chopped onion

  1 Cup finely chopped tomato

 2-3 chopped green chilli

  1 Tbsp Oil.

Rinse the lady finger and wipe them with the kitchen towel. Remove the top and bottom of lady fingers. Make a slit in lady finger with knife.

Make slits in all lady fingers.

For stuffing add all spices in a plate and mix well.

Fill the prepared stuffing in lady finger's slit.

Heat oil in a pan. Crackle cumin seeds.

Add stuffed lady finger in oil and give a good stir.

Cook for 3-4 minutes.

Cover and allow to cook for 7-8 minutes on low flame.

Uncover and stir well.

Again, cover and allow to cook for 3-4 minutes on low flame.

Switch off the flame and stir.

Heat oil in another pan.

Add green chilli and onion in hot oil. Cook for 3-4 minutes.

Add all spices and cook for a minute.

Add tomatoes and 1/4 cup water. Cover and cook till tomatoes are cooked properly.

Uncover and give a good stir.

Add curd and mix well.

Add malai (cream) and mix well.

Cook on high flame.

Add stuffed and precooked lady finger in gravy. Stir gently and allow to cook on low flame for 5-7 minutes.

Now rich & creamy malai bhindi is ready to serve.
