Butter Scotch Ice Cream

Butter scotch ice cream is loved by all. It is very easy to make at home with few ingredients which are available in our kitchen pantry. Here I have given a recipe so that you can prepare the home made butter scotch ice cream from start to finish.

Ice-Creams and Kulfi (Frozen Dessert)

Cooking Method :   

For Ice Cream base-

 200ml Fresh Cream

 250ml Full Cream milk

 1/4 Cup milk Powder

 1/4 Cup Powdered Sugar

 1+1/2tbsp Corn flour

 A pinch red orange food color

For Praline-

 1/4 Cup broken cashews

1/3 Cup sugar

1 tbsp sugar

1Tsp Butter

Add sugar in a pan. Stir it with a wooden spatula on low flame.

Now sugar has started to melt.

Allow to cook on low flame till it turns light brown in color.

Add cashews and mix well.

Add butter and mix well. Flame should be on low.

Switch off the flame.

Spread it on a butter paper or a greased plate.

Allow to cool for 10-15 minutes.

Add milk, sugar, milk powder, sugar and corn flour. Mix well.

Now switch on the flame and cook on high flame. Stir continuously.

The milk has started to thicken.

Switch off the flame and allow to cool completely.

Add chilled fresh cream in a chilled bowl.

Whip it till soft peaks.

Add cool milk mixture, food color, essence and mix well.

Now break the praline into small pieces and crush with a rolling pin.

Now add these crushed praline in ice cream base.

Mix with a spatula.

Pour in an air tight container and keep in deep freezer for 8-10 hours.

Scoop out the butter scotch ice cream and enjoy!!
